Two reasons: grade of beef and the number of days the meat has been aged.
Grocery stores typically age their meat for 10 days while we age ours for a minimum of 42 in our cold meat lockers. During the ageing process, the natural enzymes in the meat continue to break down the connective tissues to further tenderize the meat.
Our chefs only hand-cut specially selected AAA Angus to ensure that our guests get the utmost quality. This beef tends to be two to three grades higher than beef you would buy at the grocery store.
